The Food Safety and Standards Authority of India (FSSAI) directed restaurants and hotels to use only food-grade, corrosion-resistant cutting equipment while handling food.
The advisory issued Thursday requires knives, blades, and other tools to remain free from rust, cracks, paint, or defects that could contaminate food.
Officials emphasised that all cutting tools must undergo regular cleaning, sanitisation, and sterilisation. Any equipment found damaged or unsuitable must be removed immediately and replaced. The directive applies to all food businesses across States and Union Territories.
FSSAI instructed Commissioners of Food Safety and Regional Directors to enforce compliance through strict monitoring. Authorities warned that violations will attract legal action under the Food Safety and Standards Act, 2006, and related regulations.
The advisory highlights the importance of maintaining hygiene in food preparation areas. Restaurants must ensure that equipment remains in a safe condition to protect consumers from contamination risks.
