INGREDIENTSĀ
for raj kachori dough:Ā
- 1Ā½ cup maida / plain flour / refined flourĀ
- Ā½ cup rava / semolina / suji (fine)Ā
- Ā¼ tsp baking sodaĀ
- Ā½ tsp saltĀ
- 2 tbsp hot oilĀ
- Ā½ cup water (to knead)Ā
- Oil for fryingĀ
for chaat:Ā
- 1 potato (boiled & peeled)Ā
- Ā½ cup chickpea / chana (soaked & boiled)Ā
- Ā½ cup green moong dal ( soaked & boiled)Ā
- 1 cup curdĀ
- Ā¼ cup green chutneyĀ
- Ā¼ cup tamarind chutneyĀ
- 1 tsp kashmiri chilli powderĀ
- 1 tsp cumin powderĀ
- 1 tsp chaat masalaĀ
- 1 tsp aamchur / dry mango powderĀ
- 1 tsp saltĀ
- Ā½ cup sevĀ
- Ā¼ cup boondiĀ
- Ā½ cup pomegranateĀ
- 2 tbsp coriander (finely chopped)Ā
- 2 tbsp onion (finely chopped)Ā
INSTRUCTIONSĀ Ā
- Firstly, take a poori and make a hole. poori turns crisp once cooled completely (after 2 hours)Ā
- Stuff with 1 tbsp boiled potato, 1 tbsp boiled chana and 2 tbsp boiled moong dal.Ā
- Also, pour 2 tbsp curd.Ā
- Now pour a tsp of green chutney and tamarind chutney.Ā
- Also sprinkle chilli powder, cumin powder, chaat masala, amchur and salt.Ā
- Further drizzle half tsp of curd, green chutney and tamarind chutney.Ā
- Garnish with 2 tbsp sev, 1 tbsp boondi, 1 tbsp pomegranate, 1 tsp coriander and 2 tsp onion.Ā
- Finally, enjoy raj kachori immediately as a chaat.Ā
