New Delhi: Chena sandwich is a Bengali sweet dish made from paneer and stuffed with khoya /mawa and fresh cream. It has amazing flavour and melts in the mouth so smoothly.
Ingredients Â
- 1/2 ml milk
- 3 cup Water
- 10 strand saffron
- 1 gm Citric acid
- 2 cup sugar
- 1/2 teaspoon edible food colour
- 50 gm khoya
Instruction
- Dissolve the citric acid in water and keep it aside.
- Bring the milk to boil, reduce the flame. Add citric acid solution to boiled milk gradually to get soft paneer. Don’t add everything together.
- Once the milk is curdled turn off the flame, add 1 cup of cold water to it and keep covered for 15 minutes.
- Pour the curdled milk into a muslin cloth and tie it above the sink for about 15 minutes so that the whey gets drained easily. Gently squeeze the bag. Make sure that all the whey has drained out.
- Place chenna (paneer) on a plain working surface and knead with the heal of the hand till the grains disappear and chenna becomes soft and creamy.
- Divide the mixture into 15 portions (depending on the size of sandwich you want). Make the desired shape.
- In the pressure cooker add 1 cup of sugar and 3 cups of water. Bring to a boil on high heat stirring in between till all sugar is dissolved.
- Carefully place chenna squares in syrup one by one. Close cooker and put whistle. Keep on medium flame till 1 whistle and then reduce heat to simmer and cook for about 7 minutes. Switch off the flame and allow the cooker to cool.
- You will see that chenna squares will double up in size (use a wide size cooker). Remove squares from the sugar syrup.
- Add the remaining 1 cup of sugar to the syrup. Bring it to boil. Let it cool for 30 minutes.
- Now add squares into the syrup. Keep for around 30 minutes. Meanwhile, knead mava. Add a little bit of sugar syrup and 1 drop of yellow food colour. Knead well.
- After 30 minutes, take the chenna squares out of the syrup. Squeeze them a little and carefully cut them horizontally.
- You have to be very careful while cutting because they are very soft and can break easily. Do not apply pressure on the middle part of the square or else they will break.
- Apply a sufficient amount of mava on one half of the square and place the other half on it just like in a sandwich.
- Decorate with saffron strands and cut into triangles.
