Bhubaneswar: Chena Kheer is one such recipe that can be made in a jiffy and will be done in less than 25 minutes. All you need is Chena/Paneer and milk along with some dry fruits.
INGREDIENTS:
- Milk – 1½ ltr
- Lemon – 1
- Sugar – 4 + 1 tbsp
- Cashew nut (chopped) – 2 tbsp
- Cardamom (powder) – 2
METHOD:
- Boil 1/2 ltr of milk in a pan; pour the lime juice and mix well.
- Let the milk curdle. Put off the burner off and leave it for 2 to 3 minutes
- Filter and collect the cheese in a white muslin cloth.
- Rinse the paneer (cheena) under running water.
- Crumble with your hand and keep aside.
- Take a heavy base Pan. Boil 1 ltr of milk, ensure it is reduced to half.
- Add 4 tbsp sugar to the reduced milk and stir continuously. Cook for two minutes in low flame.
- Add crumbled cheese and cardamom powder. Mix thoroughly and cook for 2 minutes in low flame.
- Â Caramelized 1 tbsp sugar and add to it. Mix well.
- Add chopped cashew nut.
- Serve hot or cool as per your choice.
