Weight Loss Snacks: Try Healthy Apple Cinnamon Oatmeal Pancakes

New Delhi: Hearty oats, juicy apples and plenty of cinnamon make these Apple Oatmeal Pancakes the perfect easy breakfast!

Ingredients

  • 2 cups rolled oats (or about 1 ½ c oat flour) regular or gluten-free
  • 1 egg or flax egg
  • 1 c milk of choice
  • 1 apple I used Gala
  • ½ T cinnamon
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon apple cider vinegar
  • 1 T pure maple syrup
  • 1 T oil (canola or melted coconut oil)
  • ⅛ teaspoon sea salt

Instructions

  1. In a food processor or high powered blender, process the oats until a flour consistency.
  2. Transfer flour to a mixing bowl.
  3. In a blender, add all other ingredients and blend until smooth and combined.
  4. Add the flour to the mixture and pulse or mix to combine. (You don’t have to use the blender for this, you could also pour the mixture into the bowl with the flour and stir to combine!) If the batter seems too thick, add more milk one tablespoon at a time until desired consistency.
  5. Pour desired amount for each pancake over a griddle or pan at about medium to medium high heat.
  6. Heat until bubbles form all around the edges of the pancakes and then flip.
  7. Cook to a desired golden brown.
  8. Add your favorite toppings and enjoy!
