Try Odia Delicacy Haldi Patra Pitha/Enduri Pitha; Recipe Inside

Bhubaneswar: Haldi Patra Pitha/Enduri Pitha is a variety of pitha made in the Indian state of Odisha mostly in the northern and central regions. This Odia pitha is made with Turmeric Leaves on the occasion of Prathamastami.

Ingredients

For the pura (stuffing) grated coconut- 200gm, grated Chena- 100gm, chopped cashew and kishmish- 50gm, black pepper powder- 1 teaspoon, 1/2 tsp black pepper powder, Cardamom powder- 1/2 cup sugar/ jaggery and ghee- 1 teaspoon.

For the base(batter of dosa)- rice- 1 cup and urad daal- 1 n 1/2 cup

Required- Fresh Turmeric leaves

Preparation

The batter of pitha(dosa)- soak the urad daal n rice for 4 hours then Grind soaked rice and urad daal into fine paste n ferment it.

Preparation of stuffing (pura)- in a pan add 1 teaspoon ghee then add coconut stir it for 2 min then add chena, dry fruits and the powders stir it well for 2-3 minutes finally add the jaggery n wait till the water evaporates and let it to cool down.

Now, place a steamer in gas and add water to it, now place a water plate( jali plate and cover it to gain the steaming water.

Now, take the Turmeric leaf unfold it and put the batter on it add the prepared stuffing n fold the leaf, now put the leaf on the plate n cover it n put it on steam for 15 minutes on medium flame. Now serve it hot.
