New Delhi: Malai Kofta is a delicious dish of fried balls of potato and paneer in a rich and creamy mild gravy made with sweet onions and tomatoes.
Ingredients
For Koftas
- 250 gms/ 1 cup paneer
- 3 medium potatoes, boiled
- ½ cup mixed dry fruits, chopped
- salt to taste
- ½ tsp garam masala
- corn flour to roll
- oil to deep fry
For onion tomato puree
- 1 tbsp oil
- 1 cup onion, chopped
- 1 tbsp ginger garlic paste
- 1 cup tomato, chopped
- Salt to taste
- ½ tsp cumin powder
- 1 tbsp coriander powder
- 1 tsp red chilli powder
For final gravy
- 1 tsp oil
- 1 bay leaf
- 2-3 cardamom
- 3-4 cloves
- 1-inch cinnamon
- prepared onion tomato puree
- ½ cup cashew nut paste
- 1 tsp garam masala
- 2 tbsp cream on top
Process
- In a bowl add paneer, potato, mixed nuts, garam masala, and salt & mix well.
- Make lemon size balls, roll them into corn flour and deep fry them until turn golden brown in colour.
- For onion and tomato puree heat oil in a kadhai and add onion, and ginger garlic paste. Saute until turns light brown in colour.
- Add tomato and all spices and cook until it starts leaving oil from the edges. Remove and make a smooth paste in a blender.
- In another pan splutter all whole spices. Pour prepared puree, little water, garam masala and cashew nut paste. Allow it to cool for 5-7 minutes.
- Add koftas and serve immediately. Top it up with fresh cream.
